For over 40 years, Domenico and Giuseppe Carnevale have devoted themselves to rice cultivation with great passion, inspired by their parents Alessandro and Carla. Their family farm is located in the heart of Lomellina – a unique landscape in the western province of Pavia, where the fields are irrigated with clear meltwater from the Alps.
The rice fields are situated in the "Zona di Protezione Speciale" – the special protection area known as the “Risaie della Lomellina,” an important nature reserve. Here, authentic Carnaroli rice thrives, originating in 1945 from a cross between the Vialone and Lencino varieties developed by Ettore De Vecchi.
Carnaroli rice is distinguished by its large, firm grains with a characteristic pearly core, resulting from its unique starch composition. With a high amylose content of over 24%, this rice offers excellent bite and remains pleasantly firm even after longer cooking – the ideal choice for demanding risotto dishes.
